Address Book has a supersized text display available for phone numbers (Control-click on the label next to the phone number and choose Large Type from the pop-up menu), but there's no such option for the Notes field. Here's one way to work around that limitation.

Edit a contact and click the plus sign next to an existing phone number to create a new phone number field on the card. Instead of entering a phone number, though, enter the text of your note. Keep it short, as the more text you enter, the smaller it will be when shown in Large Type mode (OS X won't add line breaks to your text; it just shrinks it to fit on one line in Large Type mode).

Of course, you can then change the Phone label to something like Memo by choosing Custom when in Edit mode when you click the mouse button on the phone label itself. I believe this works in all Mac OS X versions. After saving and exiting edit mode, just click the Memo field next to the new entry and choose Large Ty...
